The one pair of hands

She swapped a hotel kitchen for a hawker stall.

More than thirty years in five-star hotel kitchens, a master’s in confectionery from Köln, and then — after a retrenchment in 2022 — a stall of her own. Chef Winnie mixes, proves and bakes everything herself, which is why the shelf is usually empty by lunch.
